Oh H*ll ya! I have neighbors that have an awesome garden.They grow for, and run the local food pantry. Been doing it for years, but it is getting to be too much for them. They are both in their 70's. And with this heat.. I can see them struggling. Anyway, they only have the pantry open on Thursdays, and some of their stuff is getting ripe NOW! Mainly cukes. I can't believe how big they are already? I don't think I ever had any until August. But anyway, she's offering me to take them. Can't keep them fresh until Thursday, so I took 3. Maybe I can make freezer pickles out of them. I offered to help them if they need help picking the beans and stuff for the pantry. Now I'm gonna need a freezer...
I like fresh refrigerator cukes the way my mom made them. Slice them, add sliced onions, then mix equal parts milk, vinegar and sugar. (maybe 1/4 cup each, depending on how much cuke you have) Slosh it around, and let it sit for about 30 minutes in the fridge before serving. Add fresh pepper (and salt if you like) before serving.
Such a nice thing they do, they must be amazing people. It is great that you offered to help them. The heat gets harder and harder to handle as you get older.
My Mom used to slice them with onions, salt water and let them sit in the fridge. Drain and add vinegar. Those were pretty good. I like them with sour cream too.
Yumm.. I cut one up and split it between just chunks to eat and the creamy cuke salad. So good. From the recipes I searched, I guess the vinegar/onion/salt thing is a Hungarian recipe. Guess that explains it. My Mom was 100% Hungarian.

ReplyDeleteLove refrigerator cukes. Yummy. I use mayo or miracle whip in mine with onions.garlic powder as well as what you have up there. Lots of ground pepper.
