I just put a huge pot of chicken cacciatore on the stove to slow cook. Should be nice and tender by dinner. I also have a bunch of carrots that need to be used. I'm thinking of throwing caution to the wind and adding them to the pot later with the rice. I'll be back to my boring rotation of quicker cooked meals next week. :(
